Maybe I'm misunderstanding what you want, but you can just move an image to where you want it, and the Sort field will automatically change to Custom Order. There's no need to change that field manually.
Do you have a backup of your catalogue? If you do, move your old one out of the catalogue folder in case you might need it, and unzip the backup into that folder and see if LRC will open it.
When LRC pops up a request to back up your catalogue, there's a "Choose" button to set a new location for that and all subsequent backups.

I suppose you could have imported pairs of images before deselecting "treat jpegs next to raws as separate." That toggle only works when you import photos. Deselecting it doesn't magically make the jpegs disappear from your catalogue. If that's not the case and you truly don't have it selected...
I don't know what sfax has to do with anything, but @ is perfectly valid in a folder name in Windows 10:
The OP says it doesn't work with LRC on an external disk, but it does on the internal disk.
How is that external disk formatted? Is it a NAS?
